Yummm Salmon Night

I have the very BEST clients LOL

A very lovely client of mine (Elaine Geerdes) thoughtfully brought me a slab of fresh Alaskan salmon when she picked up her printing a while back. I stuck it in the freezer and waited for the "right" moment to bring it out (BTW . . . that is code for "when Jim is gone"). When Jim goes flying for several nights . . I go cooking! All the stuff I love that he won't eat (like Salmon).

I stopped by the store before heading home this evening and picked up a bunch of fresh cilantro, a clove of garlic, a lime and a bag of white long grain rice . . my mouth was watering on the drive home.


I started a pot of rice and the outside grill. When the rice was done and resting it was time to throw on the salmon (brushed with olive oil and garlic). Into the rice I tossed a handful of minced cilantro, the juice of one lime and let it sit. I sauteed some red onions, chopped garlic and capers in a little butter to dress the salmon and tossed the rest of it into the rice.

I am in HOG HEAVEN!


I snapped a cell phone pic and texted my best friend (it took her less than a minute to call and demand I box it up and send it over LOL . . . NOT! . . . sucks to be you Kitty. . that's what you get for being 1500 miles away!!)


I have some great movies saved on the DVR . . . just me and the cat and 3 dogs (who are ALL gazing with adoration upon my plate)

  1. Looks really yummy and sounds even yummier - I have to hide my salmon dinners from my sister, but fortunately hubby loves it. However, he's putting my grilled salmon up against yours . . . I sense a cook-off coming . . . Michelle W
